Agrodolce, which means “sour and sweet” in Italian, is a traditional condiment made by reducing vinegar and a sweetener like honey or agave. The result is a tangy, slightly sweet glaze that enhances the natural flavors of squash and creates a beautiful contrast. Adding a touch of vegetables, fruit, or spice makes it especially versatile for seasonal cooking.


Squash Agrodolce Recipe

Ingredients

  • 2 squash (about 2 pounds total), seeded and cut into ½-inch rounds
  • 3 tablespoons extra-virgin olive oil
  • 4 tablespoons honey or agave nectar, divided
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • ⅓ cup white wine vinegar
  • Juice of 1 lime
  • Dash of cayenne pepper (optional)
  • 6 fresh sage leaves, thinly sliced, for garnish
  • 2 tablespoons pumpkin seeds, toasted, for garnish
  • Lime zest, for garnish

Directions

  1. Preheat oven: Set oven to 375°F (190°C).
  2. Prepare squash: In a large bowl, toss squash rounds with 2 tablespoons of honey or agave nectar and olive oil. Season with salt and pepper.
  3. Roast squash: Arrange squash on two baking sheets and roast for 12-15 minutes per side, or until golden brown and tender. Flip halfway through.
  4. Make agrodolce: In a small saucepan, combine white wine vinegar, lime juice, and remaining 2 tablespoons of honey or agave nectar. Bring to a boil, then reduce heat and simmer until thickened and syrupy, about 8-10 minutes. Add a dash of cayenne pepper for a spicy kick, if desired.
  5. Assemble: Drizzle the warm agrodolce sauce over the roasted squash. Garnish with fresh sage leaves, toasted pumpkin seeds, and a sprinkle of lime zest.
